For the White Penja Pepper Paragon Cordial, the raw pepper berries are soaked in water and alcohol for several days to weeks, where they release their camphor aromas. The flavored liquid is filtered and then becomes part of the cordial. Another technique used by Monin is Supercritical CO2, which extracts the menthol flavors of the White Penja Pepper. To achieve this, carbon dioxide is brought to a state between gas and liquid and put through the pepper berries, absorbing their fragrance molecules. 20ml Umeshu Tomari
20ml Gin
20ml Aquafaba
5ml Lemon Juice
Soda Water
Preparation: Put all ingredients except soda water in a shaker with ice and shake. Then strain into a highball glass filled with ice and top up with soda water (approx. 50ml).
Ingredients: beet sugar, water, acids: gluconic acid, citric acid, natural white penja pepper flavor, natural flavor.
